Chris’s demonstrations focus on food you can make at home. Ask about a morning with family, an afternoon with friends, a reunion, or a bachelor or bachelorette gathering. Discuss the menu, guest count, and setting with Chris to shape the experience.

• Techniques and recipes you can use in your own kitchen
• A food and wine pairing with three wines and three food tastings

Small bites & salads

• Arugula and pecan pesto; Roma crudo with almonds and basil
• Bruschetta, lumpia, or oyster preparations: choose two
• Poached pear, blue cheese mousse, red oak lettuce, crispy walnuts, aged sherry dressing
• Warm red potato and goat cheese salad, petit greens, fig vinaigrette

Sauces worth knowing

• For fish: vin blanc with leeks, shallots, and thyme; or tomatoes, Dijon, capers, lemon, and herbs
• For poultry: tarragon and red pepper butter; or rosemary and roasted garlic jus
• For meat: classic bearnaise or roasted mushroom sauce

Comfort dishes

• Sicilian style meatballs or Mama’s bolognese
• Choose two sides: risotto, whipped potatoes, ET potatoes, or soft polenta
• Choose two breakfast dishes: eggs Benedict, omelets, quiche, or beef short rib hash
